A festive limited edition coffee with an exceptional flavor profile. The coffee beautifully combines notes of tropical fruit and red wine with the sweetness and aroma of vanilla, jasmine, and gingerbread spices. Expect notes of red berries, raisins, gingerbread, and a milk chocolate finish. The coffee has a medium velvety body, high sweetness, and ripe medium acidity. When filtered, it is a juicy coffee with notes of tropical fruit. When espresso, the high sweetness, aromatic spices, and acidity of red wine stand out.

 

This coffee is definitely not just any Christmas limited edition. We have saved one of the most interesting coffees of the year for you until the very end of the season!

 

The Los Nogales farm is one of the most progressive and, recently, one of the most famous farms in Colombia. The face of this farm is Oscar Hernández, who comes from a third generation of farmers. His farm is located in the village of El Diamante in the south of the Huila department, near the town of Bruselas. Oscar's father, Ricuarte, was the first farmer from Bruselas to win the Colombian Cup of Excellence, putting the entire local community on the map of specialty coffee.

Los Nogales adheres to three fundamental pillars: terroir, genetics, and innovation. 

 

They treat the land on which they grow their coffee with respect and, thanks to sustainable agriculture, strive to preserve the farm for future generations. 

In addition to traditional varieties that have been grown in Colombia since the 18th century, they also grow new varieties such as Castillo and Colombia on their farm, as well as imported exotic varieties such as Gesha and Sudan Rume. However, Los Nogales has really made a name for itself in the coffee processing and fermentation process. Oscar employs a biochemist, an agricultural engineer, and a microbiologist on the farm, and their work and results are an inspiration to many other farmers. 

 

The lot we have selected for you in this Holiday Edition is called Harmony. It is a Bourbon Pimienta (Ají) variety processed using the Mosto fermented washed method. During this process, the juice from the coffee cherries themselves is added to the fermentation tanks. This process has several precisely controlled stages and is responsible for the exceptional taste of this coffee. 

 

The processing takes place as follows:

 

– Selection of ripe fruit. The process begins with the careful harvesting of only ripe coffee cherries. 

– Cleaning and disinfection with treated water: The harvested coffee beans undergo thorough cleaning and disinfection with treated water. This helps to eliminate impurities and unwanted microorganisms.

– Sorting by density, known as floating: The coffee beans are immersed in water and sorted according to density. Beans with higher density tend to sink, while beans with lower density float. This helps separate quality beans from defective ones.

– Heat shock: Selected beans are subjected to heat shock with water at a temperature of 80 °C for 20 seconds, followed by rapid cooling with cold water for 3 to 5 minutes. This process breaks down sugars and pasteurizes the beans, contributing to the final taste of the coffee.

– Removal of husks in a wet mill and addition of must: The coffee cherries are stripped of their husks and placed in fermentation vats. Juice extracted from pressing the husks of the coffee cherries, which contains large amounts of natural sugars, is added to them. This step gives the coffee even more sweetness and fruity tones.

– Fermentation: The coffee beans undergo a fermentation process that lasts 120 hours. During this time, the sugars are broken down, which affects the taste and acidity of the coffee. The addition of pre-ferments, similar to sourdough in bread, is also mentioned, which gives the coffee unique properties.

– Sun drying: Finally, the fermented coffee beans are dried in the sun for 15 days. 

 

Thanks to these methodical processing techniques, Oscar manages to create truly unique flavor profiles. From a single variety, he creates completely different coffees through different fermentation processes.
