Tropical & Winey
An intense, aromatic coffee with notes of dark grapes, pomelo, and magnolia. The flavor is dominated by distinctive notes of tropical fruit, wine-like acidity, and medium fruit sweetness. The coffee has a juicy texture, medium body, and pleasant acidity. As filter coffee, it is a sweet and aromatic coffee with flavors of strawberries, grapes, pralines, and dark chocolate. As an espresso, the acidity of currant wine and notes of pomelo, magnolia, and ripe cherries stand out.
We have once again selected a rather unusual coffee for our limited edition. It comes from the El Salitre farm, which is run by the Alvarado Fonseca’s family together with the Corazón de Jesús processing station. The farm is located in the Brunca region at the foot of Costa Rica's highest mountain, Cerro Chirripó. All of the farm's production comes from 15 hectares of fertile volcanic soil, which gives the local coffee its excellent quality. The El Salitre farm has earned international recognition for its experimentally processed coffees and unusual varieties, and its coffees regularly rank high in Cup of Excellence competitions.
The lot we have selected for you consists of the F1 Milenio hybrid variety, which combines excellent taste qualities with high yield and resistance. This variety was created by crossing the Sarchimor and Sudan Rume varieties. While Sudan Rume has its origins among traditional Ethiopian varieties and is known for its flavor quality and aroma intensity, Sarchimor is a hybrid variety created by crossing Arabica with Robusta. It is from the Sarchimor variety that Milenio inherited its resistance to coffee rust and high yield.
Alvarado chose a processing method for this lot called Natural Reposado. This is a classic dry processing method, but it is preceded by fermentation of the cherries in closed tanks under controlled conditions. This anaerobic fermentation adds wilder tones of tropical fruit to the resulting flavor profile. The final step in the processing was the controlled drying of whole cherries on raised dryers for several weeks until the optimal moisture level was achieved.
Hybrid varieties are becoming increasingly widespread in the world of specialty coffee and, in addition to their excellent flavor qualities, they also offer a possible solution to the issues of sustainability and growing demand for specialty coffee. This is the first time we have encountered the Milenio variety, and it immediately caught our attention. We hope it will do the same for you!
