Sweet Delight

 The cup of this coffee is dominated by a high sweetness with a very pleasant, mild acidity. The flavour is strongly influenced by the anaerobic fermentation that takes place before the coffee is dried and shows notes of overripe fruit that remind us of strawberries, mulberries or blueberries. There are also sweet, slightly alcoholic notes of amaretto and a pleasant bitterness of dark chocolate. We enjoy this coffee immensely both on espresso, where the full body and high sweetness come through more, and on filter, where the fruity acidity and juiciness of the strawberries come through.

Otávio Reis is the fifth generation of farmers at Do Salto. His family farm comprises nearly 800 hectares of land, where the tradition of coffee growing has lasted for an impressive 100 years. At Do Salto, they are very aware of the importance of this legacy and, in addition to maintaining the exceptional quality of the beans, they do everything they can to keep the farm in the best possible condition for future generations. For this reason, they strive to preserve the original forests and springs and, among other things, return the treated water used during the processing of the coffee back to the ecosystem. The farm employs 40 permanent workers, whose families are provided with accommodation and help with their children's education.

Fazenda Do Salto is a member of the Brazilian SCA (Specialty Coffee Association) and their coffee is regularly featured in various competitions as well as the Cup of Excellence. Otávio employs production technicians who innovate the farm's processes through experimentation and new methods and approaches, thus also expanding their portfolio. 

The lot we have chosen for you is composed only of the Yellow Bourbon variety processed using the natural method. After picking, the cherries were first enclosed in tanks for 36 hours and subjected to anaerobic fermentation. This process helped to increase the sweetness, but is also responsible for the fruity and slightly alcoholic notes that appear in this coffee. The cherries were then dried in three stages, taking up to 40 days in total before the beans were ready to be pulped from the cherry.
