The cascara extract is prepared in a similar way to loose tea, with the same rules as for coffee. So for 1 liter of drink, use 50g, pour hot water (approx. 93℃) and leave to infuse for up to 10 minutes, then drain. Anyway, don't be afraid to experiment and be surprised how cascara develops more and more flavours with a different style of preparation!
It's not the first time you've seen Cascara with us, so you must know that after 4 years of paperwork, it can be sold again - and we are of course very happy about that. It's been a long time since Cascara was licensed, though, so it's time for a new, fresh crop, which we've once again sourced from Panama.
And straight from the stellar Carmen Estate farm, which is known for producing some really first class coffee! The emphasis they place on quality in their coffee is reflected in the quality of their cascara. The pulp comes from naturally processed caturra cherries and they really don't lack sweetness. The brew is juicy, fruity with a honey sweetness.
The cascara itself is a by-product of the processing of coffee beans. It is a crushed coffee cherry that offers a fresh, fruity flavour and plenty of caffeine and antioxidants. The cherries have been dry-processed, sun-dried for 10-14 days and then stored for 3 months to age. The processing of the grains ("hulling") takes place before the actual packaging and shipping.
