Pink Soda

An intense but elegant coffee of competition quality! Look forward to a high sweetness reminiscent of candy, marshmallow, pink tonic or cream soda. This complex coffee never ceases to surprise with a multitude of flavours, from fruity to floral notes. It reminds us of rhubarb, orange, cherry, elderflower or jasmine. On the filter, ripe peaches and strawberries stand out, with honey sweetness, an sticky body and the aroma of formosa tea. On espresso, the flavours change to cherry cola and hibiscus with a juicy texture and lilac aroma as the acidity increases.

 

This coffee is really special to us and carries with it a powerful story in addition to its absolutely fabulous taste. Last September, our Head Roaster Alica attended the Best of Huila 2024 auction in Colombia and managed to auction off the coffee that she liked the most in a blind tasting. For us, this is the first coffee we've ever auctioned directly from a farmer, and it's even more important to us that it's from a farm that Alice visited during her trip and got to meet the family behind the lot.

This coffee comes from the Filadelfia farm, located near the village of El Tabor in the San Agustin department of the Huila region. The farm is run by the Gomez family - Ramon, his wife Imelda and son Jorge Mario. Jorge is the third generation of farmers on this farm with a great passion for fine coffee and new technological practices. His father, Ramon, works as a Q-grader and buyer for InConexus and brings his experience and know-how to his farm in quality control and processing.

One of the important lines they follow on the farm is regenerative agriculture and an emphasis on sustainability so that the farm can be passed on to the next generation.

However, Imelda, Ramon's wife, is directly behind the lot that Alice was able to auction off. We are very keen to support women farmers and they appear in our production quite often. The lot that Imelda entered into the auction with and which eventually came in 5th place is a Pink Bourbon variety processed using Honey Anaerobic method. After picking only the ripe cherries, they were sorted according to density and then sanitized. The cherries thus prepared were subjected to a 48-hour fermentation in a barrel without air. The anaerobic fermentation produces a creamier texture, higher sweetness and fruity notes in the taste. The cherries were then de-pulped without using the water and resealed for 90 hours in airtight barrels for further fermentation with the remaining pulp. Finally, the grain was washed and dried on elevated drying racks for 20-25 days. The result of this precise and controlled processing is a complex and clean coffee with the best flavour characteristics.

There are many reasons not to miss this limited edition. Taste-wise, this is one of the best coffees we have had the opportunity to roast.
